Hamilton Company, one of the pioneers of optical DO measurement, has built a complete portfolio of inline measurement sensors and accessories for the brewing industry. Hamilton’s innovative ARC platform features integrated wireless transmitters, bringing the conveniences of modern wireless technology to inline sensors, including integrated Bluetooth communication. Dissolved Oxygen Monitoring dissolved oxygen (DO) is critical throughout the brewery. A low O 2 content during wort aeration can lead to stalled fermentations and the formation of off flavors. After fermentation, downstream processes must introduce as little oxygen as possible to maintain flavor, color and colloidal stability. Real time DO measurement provides the opportunity to make rapid decisions and optimize the brewing process. Hamilton’s Visiferm mA DO Arc sensors are capable of measuring a broad range of DO from 10 ppb to 25 ppm for maximum versatility, ideal for monitoring wort aeration and oxygenation. Hamilton’s Visitrace mA DO Arc sensors feature enhanced electronics that make them ideal for monitoring low levels of DO in separation, filtration, and packaging processes. They are designed for low‑end DO measurement from 0–2000 ppb. pH Measurement Monitoring pH during various points of the brewing process provides the ability to make quick decisions that can impact product taste, color, viscosity, and stability. It can also provide the information required to optimize enzyme usage. Easyferm Bio HB Arc sensors feature Hamilton’s HB glass and a pressurized electrolyte, providing the best pH sensor lifespan available in brewing applications. Conductivity Conductivity sensors are used to catch product, control CIP systems and chemical dosing pumps, as well as monitor waste effluent. Conducell Arc sensors feature a 4 pole contacting sensor, stainless steel electrodes, and can measure conductivity up to 300 mS/cm.
Inline cell density measurement provides breweries real time access to indicators of yeast health without having to take samples to the laboratory. Total Cell Density measurements indicate the concentration of total cells in suspension, useful during fermentation when monitoring biomass growth is important. Viable Cell Density measurements indicate the concentration of living cells in suspension, helpful when optimizing pitch rates. Used in conjunction, Total and Viable Cell Density measurements provide brewers with a Viability Percentage, a powerful indicator of overall yeast health. Viable Cell Density Incyte Arc sensor measures Viable Cell Density by way of permittivity, which is a measurement of capacitance per unit area. The Incyte generates a small electrical field, polarizing nearby viable cells, and the charge generated by the viable cells is picked up by the sensor.

Total Cell Density Dencytee Arc sensor measures Total Cell Density using infrared light scattering at 860 nm. A 5 mm sensing gap in the sensor with detectors on both ends measures the amount of light reflected by suspended cells.
