Liquefaction Occurs when milled grain is added to water and heated. The starch in the grain gelatinizes making it available to enzymes, but with a dramatic increase in viscosity. Heat stable alpha-amylase break down starch and reduce mash viscosity without the need to add more water. Apply to cereal cooker for faster, consistent liquefaction.

Saccharification A critical step where dextrins and other starches are broken down even further to fermentable sugars. Glucoamylase enzymes break off single molecules of highly fermentable glucose from starch molecules for yeast to metabolize. Add to cooled mash for best results.
