IFF Distilling Enzymes Reduce Cost, Increase Yields, Improve Efficiencies

Enzymes are used by distillers to improve process efficiency, increase alcohol yield, enhance fermentation, and to maintain overall quality and ensure brand consistency. With enzymes, distillers can make use of locally produced grains and alternative raw materials to create unique, single-grain and alternative spirits. These enzyme activities are offered by Gusmer as IFF enzymes. • Reduce mash viscosity and increase extract • Produce more fermentable sugars and assure consistency even with varying raw material • Reduce cost, waste, and energy consumption • Accelerate production and consistently achieve high-quality spirits

IFF liquid enzymes are available in a variety of pack sizes, ranging from jerricans to IBC totes. Contact your Gusmer representative for availability and lead times.

Enzymes are proteins that act as catalysts to promote chemical reactions. Very small amounts can cause a significant, but specific change in large amounts of material. Enzymes act more slowly at lower temperatures and are permanently denatured by high temperatures. Process temperature, pH, and enzyme additions must be controlled for optimum results.

Viscosity Reduction Enzyme activities such as cellulase, beta-glucanase, xylanase, and arabinase break down the non-starch polysaccharides to release more starch for conversion and reduce mash viscosity. Add during the pre-treatment step.

Liquefaction Occurs when milled grain is added to water and heated. The starch in the grain gelatinizes making it available to enzymes, but with a dramatic increase in viscosity. Heat stable alpha-amylase break down starch and reduce mash viscosity without the need to add more water. Apply to cereal cooker for faster, consistent liquefaction.

Renaissance has developed a new line of yeast strains that have a natural inability to produce hydrogen sulfide. Hydrogen sulfide, a known fermentation byproduct, can carry over in the distillation. Gusmer’s Micro Essentials fermentation nutrients are based on the latest research, designed specifically for alcoholic fermentations, and incorporate premium ingredients.

Our complex supplements contain highly refined polypeptides and amino acids, and a full spectrum of essential vitamins, minerals and other yeast survival factors for a rich source of compounds that are highly assimilable by yeast. • Produced domestically in our own facility under GMP conditions • Used to support yeast growth, protein synthesis, general metabolism, and alcohol tolerance • Contributes to vigorous fermentation and consistent congener production • Guards against the formation of unwanted metabolites The use of fermentation nutrients in alcoholic fermentations is well documented. In addition to fermentable sugars, yeast requires nitrogen, vitamins, minerals, sterols and more to build biomass and reach the cell density required for a healthy fermentation. While fruit and grain substrates supply the carbohydrates required for fermentable sugars, they often lack these other key nutritional components. When they are not made available yeast grow under stressful conditions and fermentations are often sluggish, inconsistent, incomplete and produce undesirable metabolites such as hydrogen sulfide that can carry over into the distillate.

Gusmer Enterprises Select Filter Housings High Quality, Cost-Effective

Gusmer Enterprises’ Select filter housings are designed as a cost-effective system for high capacity liquid filtration applications. The Select housing line accommodates 12” diameter Cellu-Stack filters. All housings are available in 1, 2, 3, or 4-stack high versions, which can be modified with the use of Cellu-Stack adapters to accept fewer cartridges for partial batch runs or other applications requiring fewer cartridges.

Cellu-Stack Application Notes

• Place a quick acting check valve at the housing outlet to avoid integrity breaches that can be caused by backpressure • Double check that all cartridge gaskets are in place and in good condition to ensure optimal sealing • If filter life is not fully exhausted by a single filtration, DO NOT remove used filters from the housing for storage between uses. Instead, used filters can be stored IN the housing for short term periods by following these steps: Shut Down: After completion of the filtration cycle, sanitize the filters with the same method used to prepare the filters (i.e. steam or hot water flush) Storage: Drain the housing, apply 2 psi gas pressure (i.e. CO 2 , nitrogen) while the housing is still warm (to avoid a vacuum upon cooling) and close all ports Restart: When restarting for another filtration cycle, repeat the sanitization procedure just as you would for normal filter preparation

Gusmer Enterprises is proud to offer our BevReady line of filter cartridges to the beverage industry. Gusmer’s BevReady Filter Cartridges provide distillers efficient and effective particle and microorganism removal while maintaining a high level of product quality. Our cartridges are assembled and packaged in an ISO9001 certified Class 7 clean room. The polypropylene construction delivers a robust filtration solution that can withstand most beverage CIP processes.

BevReady Pure Featuring a pleated polyethersulfone membrane, BevReady Pure cartridges provide excellent flow characteristics, low protein binding, and a long service life. These cartridges are absolute rated with certified integrity test specifications and are available in pore sizes of 0.2 µm, 0.45 µm, and 0.6µm. BevReady Guard Featuring a pleated gradient density polypropylene membrane, BevReady Guard cartridges are an excellent pre- filtration choice to protect absolute rated cartridges due to high particle loading capacity at superior flow rates. Gusmer Enterprises Cartridge Filter Housings

Gusmer’s line of Code 7 T-Line style Cartridge Filter Housings are designed specifically for beverage filtration. These sanitary housings are constructed with high quality, yet economical, food grade materials. All metal surfaces in contact with the product are 316L grade mechanically polished stainless steel and seals are EPDM or silicone. Each housing comes with a sight glass assembly with pressure gauge, support legs, gaskets, and clamps.

View Table of Contents Application Notes For BevReady Cartridge Filters Installation • Ensure that the housing, pressure gauges, valves, gaskets, and o-rings are in good working order. Operation (continued) • A common practice is to terminate the filtration and clean or change cartridges when the differential pressure reaches 30 psi.

Housing o-rings should be replaced on a regular basis. • Carefully remove the cartridge from the packaging material and inspect. Use caution when opening the filter bag – scissors are recommended. Each filter cartridge is stamped with the grade and comes with a quality certificate in the box. Verify that the correct filter is being installed for the intended application. • Wet the o-rings with water and install into the housing, being careful not to roll the o-rings upon installation. • Run ambient temperature water through cartridges under a little back pressure to fully wet out the filter media. Sterilization & Cleaning • Gusmer Enterprises recommends the use of hot water at 82 °C / 180 °F for 30 minutes for sterilization of filters and filter housings. The time period starts when the housing outlet comes to temperature. • Once the proper temperature is reached, take care to use only a low hot water flow and low differential pressure. • Each hot water cycle should always be preceded and followed by an ambient water rinse cycle. Use filtered, softened water for wetting, cleaning, and sterilization to avoid fouling the cartridges. • If hot water is not available, the filters are compatible with a wide range of sanitation chemicals. Please consult your Gusmer representative for specific info. • Ensure that filter housings remain vented during cleaning and sterilization. • It is recommended to start each cleaning cycle with at least 5 minutes of cold water flow. Temperature should then be gradually increased to its final cleaning temperature (typically 82 °C / 180 °F). A longer warm water rinse is beneficial to cleaning. • Filters should never be contacted with a temperature above 57 °C / 135 °F without first rinsing with cold/warm water to achieve maximum throughput. • Some filters can be backflushed. Please consult your Gusmer representative for specific information. • Avoid pressure shocks and water hammer especially during cleaning/sanitation with hot fluids. Operation • Differential pressure (inlet minus outlet pressure) should be monitored regularly. Differential pressure increases as the filters plug, eventually leading to a loss of flow through the filter. Differential pressure increases exponentially. It may take many weeks to reach 80% plugged, but only a few hours for the final plugging to occur.

• Operate the process at the lowest, consistent flow rate to have a positive effect on filter performance. A higher face velocity leads to faster plugging. • Avoid pressure shocks and water hammer on the line. • Ensure that the top of the housing dome is periodically vented during production to remove any gas buildup that may overlap the filters. Integrity Testing • Integrity testing is only conducted on final membrane cartridges and should be conducted per the recommended specifications of the manufacturer for the specific membrane used. Integrity testing is conducted after the sanitation cycle, both prior to and after the bottling run. • There are a few different methods for integrity testing, of which the bubble point and pressure hold methods are the most common. The bubble point method is recommendedfor housings with three or fewer cartridges and the pressure hold method is recommended for housings with more than three cartridges. • Please consult your Gusmer representative for detailed information on integrity testing methods and specifications. • Every BevReady Pure filter cartridge is integrity tested prior to packaging. Damage caused to cartridges by shipping, installation or process improprieties, or housing and valve issues are usually manifested as gross integrity test failure. Cartridge Storage • Intermediate storage (overnight or over a weekend) can be done in the filter housing. Flush the filters with warm water, sterilize the housing and pressurize with 5 psi of nitrogen. The nitrogen keeps the housing under a positive pressure. • Long-term storage is best done outside of the filter housings. Four inch PVC piping capped at both ends is frequently used to store the individual cartridges in a solution of 350 ppm sulfur dioxide that has been adjusted to a pH of 3.5 with citric acid. This solution should be tested every month and replaced as necessary. Ethanol at approximately 40% may also be used for long term storage. Remove o-rings from the cartridges prior to storage and store the o-rings in a clean and dry place. • Reinstall the o-rings, rinse, sterilize and integrity test stored cartridges prior to resuming bottling filtration.

Sigrist LabScat 2 Dual-Angle Lab Turbidimeter

The LabScat 2 measures turbidity in liquids using a single light source to detect transmitted light and scattered light at 90° and 25°. This allows color- compensated dual-angle measurement in bottles and glass cuvettes.

Bottle rotation and a water bath minimize potential measurement interferences, including from the water bath itself as its quality is automatically monitored. Operation is via a color touchscreen display and no tools are required for routine maintenance.
