Why is sulfide detection important? Wine can have off-aromas related to sulfides, causing a rotten egg, skunky, or cabbage smell. The sulfide compounds include hydrogen sulfide, mercaptans, and higher molecular weight disulfides. Lower molecular weight compounds are often treated effectively with copper alone, while the higher molecular weight compounds require initial treatment with ascorbic acid. Our Sulfide Detection and Treatment panel utilizes different levels of ascorbic acid and copper sulfate, followed by sensory trials to identify and address sulfide issues. How to Submit and Ship Samples Grape and Juice Samples Grape clusters can be refrigerated and shipped with a cooler pack. Will my wine prematurely clog my sterile membrane? The Membrane Clogging Index test provides a clogging index number that indicates whether the wine is ready for sterile filtration. This test requires 500 mL of wine and should be conducted no more than five days before sterile filtration or bottling. A passing result is anything below 25 - this wine will generally be easy to filter through final cartridge filter membranes. A failing result is anything above 25 - this wine requires additional depth filtration prior to sterile filtration to prevent clogging and maximize the throughput and life of the final cartridge filter membrane.
