5 different levels of bentonite treatment are evaluated to determine the dose rate needed to achieve your desired clarity. Tartaric acid is added to wine to achieve the desired pH or TA. Samples can be picked up for tasting after adjustment. Calcium carbonate is added to wine to achieve the desired pH or TA. Samples can be picked up for tasting after adjustment. An assessment of any defects that may be present, a description of aromas, flavors, color, and balance of the wine. Sulfide detection and treatment is carried out by adjusting levels of ascorbic acid and copper sulfate, followed by sensory trials to identify the nature of the sulfide issue and determine the appropriate treatment
